Red cabbage soup recipe details
Ingredients
500 g | red cabbage, finely sliced |
250 g | onion, diced |
40 g | butter |
160 ml | red wine |
80 g | cowberry compote |
260 g | apple sauce |
15 ml | raspberry vinegar |
1 l | vegetable stock |
1 | clove |
3 | bay leaves |
4 | peppercorns, crushed |
250 g | single cream |
salt and pepper | |
sugar |
Instructions
In a large skillet sauté the cabbage and the onion until lucent, then deglaze with the red wine and cook for some minutes.Add the cowberry compote and apple sauce, the vinegar, stock, clove, bay leaves and peppercorns and bring to the boil. Simmer over low heat for 45 minutes.
Finely purée, then pass the soup through a sieve back into the skillet. Reheat and stir in the single cream. Season to taste with salt, pepper and sugar.
Ladle the soup in soup plates and serve.
