INGREDIENTS:Bread dough:
450g Basic Sweet Bread Dough
Filling:
Red Bean Paste
Topping:
Almond flakes
Sesame seeds
Method:
- Divide dough into 50g balls and rest them for 5 minutes before going on to shaping.
Pattern 1:
(a) On a lightly floured surface, use a rolling pin to roll out a dough.
(b) Spread some red bean paste on it . Join the edges to form a ball. Roll the ball lightly to smoothen the surface. Place the dough on a baking tray for second rising.
Pattern 2:
(a) On a lightly floured surface, use a rolling pin to roll out a dough.
(b) Spread some red bean paste on it . Join the edges to form a ball.
(c) Roll out the dough. Use a knife to cut a few deep slits on the flatten dough.
(d) Grasp opposite sides of the dough and twist. Tie the twisted dough to form a knot . Place the dough on a baking tray for second rising.
Pattern 3:
(a) On a lightly floured surface, use a rolling pin to roll out a dough.
(b) Spread some red bean paste on it . Join the edges to form a ball.
(c) Roll out the dough. From the edge furthest from you, roll the dough like a swiss-roll to the edge nearest to you.
(d) Partially cut the rolled dough into three segments living a slit in between each segment. Intersect the two slits to obtain a shape. Place the dough on a baking tray for second rising.
- Cover the dough with a damp tea towel and leave to rise for 30-40 minutes until double in size.
- When the second rising is done, brush the tops of the buns with egg wash (1 egg+1 tsp water).
- Sprinkle buns of Patterns 1 and 2 with some sesame seeds. Decorate buns of Pattern 3 with some almond flakes .
- Bake the buns in a preheated oven at 180 degC for 30 minutes. When done, leave the buns on a wire rack to cool .
Notes:
- Start baking with upper and lower heat. When the top of the buns have become brownish, turn the heat source to lower only. As We always say, heating characteristic of every oven varies. You have to adjust the temperature, heat direction and cooking time of your oven accordingly.
- Too high temperature of the oven will result in buns with thick and hard crust. Adjust temperature of oven when necessary.
- Avoid using too much flour on your working surface as this will cause relative tough and crusty surface in the product.
