Raspberry semifreddo recipe details
Ingredients
500 g | raspberries in syrup, thawed |
1 tbsp | cornstarch dissolved in water |
3 large | eggs, separated |
60 g | sugar |
250 g | mascarpone cheese |
1 ½ tbsp | vanilla |
60 g | finely grated semisweet chocolate |
Instructions
Purée the thawed raspberries in a blender. Then force the puree through a fine sieve to remove the seeds.In a saucepan bring the puree to a simmer, stir in the cornstarch mixture. Bring to a quick boil whilst continously stirring. Let it cool and chill, covered.
Beat together the yolks and the sugar until the mixture is thick and pale. Then add the mascarpone and the vanilla.
In another bowl, beat the egg whites until stiff peaks form and fold them into the yolk mixture. Mix.
Spoon half the mascarpone mixture into the a chilled pan, sprinkle it with the chocolate, and spoon the remaining mascarpone mixture onto the chocolate, smoothing it carefully.
Freeze the mixture for 8 hours or overnight.
To serve place a slice of the semifreddo on a serving dish, arrange the fresh raspberries decoratively on the plate and serve with the raspberry sauce.
