Raspberry gelatin parfaits recipe details
Ingredients
500 ml | cranberry raspberry juice |
4 tbsp | sugar |
1 envelope(s) | unflavoured gelatin |
500 g | raspberries |
100 ml | whipping cream |
12 | raspberries, for garnish |
Instructions
In a large saucepan, combine 120ml of the juice and 3 tablespoons sugar. Sprinkle gelatin over juice mixture and let stand for at least 2 minutes.Cook juice mixture over low heat for about 3 minutes or until gelatin and sugar have dissolved, stirring frequently.
Process 250g of the raspberries until puréed. Pour purée into a sieve set over bowl and press with back of spoon to remove seeds. Discard seeds.
Stir raspberry puree into the gelatin mixture and pour in the remaining juice.
Set saucepan in a bowl of ice water. Stir mixture with a rubber spatula, 5-6 minutes or until it begins to mound when dropped from spoon. Remove saucepan from water.
Gently stir remaining raspberries into the gelatin mixture and spoon mixture into four dessert bowls. Cover and refrigerate until set, at least 4 hours or up to overnight.
To serve, beat whipping cream and remaining sugar until soft peaks form. Spoon whipped cream onto parfaits and sprinkle with reserved raspberries.
