Raisin Cheesecake recipe

Ingredients
4 tbsp | margarine, melted |
450 g | cream cheese, softened |
60 g | granulated sugar |
50 g | flour |
2 medium | eggs |
70 g | brown sugar |
60 g | raisins |
2 tbsp | oats |
Instructions
Combine oats, margarine and 3 tablespoons of brown sugar. Press onto bottom of a spring form pan. Bake at 180°C for 15 minutes.In a bowl combine cream cheese, granulated sugar and 2 tablespoons of the flour and mix well with an electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in sour cream and rum; mix well. Pour over crust.
Mix together margarine, remaining flour and brown sugar and mix until mixture resembles coarse crumbs. Stir in raisins. Sprinkle over cream cheese mixture and bake at 180°C for 50 minutes.
Cool for about 1 hour before removing rim of pan.
Tip: Use Hot Rum Sauce as additional topping. If you are not a fan of raisins, simply omit them and bake cake as instructed above.
