Raf rob's almost famous legs over buffalo recipe details
The chicken leg is often the redheaded step child of the bird. I say no more! This recipe elevates the leg to culinary heights normally reserved for the now legendary wing. It’s gonna take some time in the brine so plan ahead…it’s worth it! Gentlemen, start your grills…… it’s time for legs over buffalo!
Ready in: 3 hours 5 mins
Ingredients
Serves: 2- 2 cups Franks Red Hot(R) sauce
- 1/4 cup apple cider vinegar
- 1/2 stick (1/4 cup) butter
- Salt
- Cayenne pepper
- Lump charcoal
- Apple juice
Preparation method
Prep: 5 mins | Cook: 1 hour | Extra time: 2 hours, marinating1. Combine 1 cup Red Hot and vinegar in a large plastic resealable bag just big enough to hold the chicken and mix well. Place the legs in the bag and seal well, pressing down to push out the air.
2. Place in fridge for 2 hours or more to marinate. More time equals more FLAVOR!
3. Start your fire 30 minutes prior to cooking. Meanwhile, pull the legs from the fridge and allow to come to room temperature. When the coals are white, you need to arrange them in a circular pattern and place a drip pan in the middle.
4. Pour some apple juice in the drip pan until it is about half way full. Now put your grill’s plate on and place your legs over the drip pan. The legs will need to cook for about an hour or until the juices run clear.
5. While the legs cook, combine the remaining hot sauce with the butter in a plastic bowl. Microwave until the butter melts. Adjust to taste with cayenne pepper and salt.
6. Place legs in a separate bowl and season with salt. Add the butter/hot sauce mixture and toss to coat. Now dump them on a serving plate. It’s LEG TIME…MMMM!Tip
The pros use plastic bowls with lids and shake to coat. You should too!
Serving suggestionThe usual suspects…blue cheese or ranch dressing…plus carrot and celery sticks so we can tell the wife we’re eating healthy.
