Rabbit face cake recipe details
I swear, no rabbit meat! It’s a flavored cake in the shape of a rabbit’s face with cream cheese and coconut frosting.
Ready in: 3 hours
Ingredients
Serves: 24- 1 cake mix, flavor of choice, I use lemon
- 2 eggs
- water
- oil
- 16 ounces cream cheese, softened
- 2 (12 ounce) packages dried coconut
- red food coloring
- 1 cup butter, softened
- 1 (1 pound) package powdered sugar
- 1 (16 ounce) package black licorice
- 2 tablespoons lemon juice or extract, optional
- jelly beans
- Coconut-flavored rum
Preparation method
Prep: 30 mins | Cook: 30 mins | Extra time: 2 hours, other1. Mix cake mix as directed, using egg, oil, water as directed. Pour in 2 greased round pans and bake as directed. When cooled, freeze 1 layer.
2. Mix cream cheese, butter, powdered sugar, and lemon juice or extract in mixing bowl. Frost 1 single layer.
3. Take out frozen layer and carefully mark a “peace sign” on the cake with a knife; when satisfied with drawing, cut cake into four shapes.
4. Place the 2 large pieces, your rabbit ears, on each upper side of frosted layer, then frost.
5. Set aside 1 cup of coconut and add red food coloring to it to make coconut pink. Carefully place pink coconut on inside of ears. Sprinkle plain coconut on rest of entire cake.
6. Use jelly beans as eyes, and black licorice as whiskers.
7. Optional: pour rum in spray bottle and spray cake, allow to soak in, and repeat.Other ideas
Immediately when taking cake out of oven, spray cake with rum, then let freeze. Unfrosted / unassembled cake can be made ahead and kept in freezer, spraying with rum repeatedly.
