Ingredients
1 | red bell pepper, diced |
1 | courgette, diced |
50 g | mushrooms, sliced |
1 tsp | oil |
1 | tomato, diced |
3 tbsp | tomato juice |
2 tbsp | black olives, sliced |
rosemary, chopped | |
thyme, chopped | |
salt and freshly ground black pepper |
Instructions
In a pan, heat the oil. Fry the mushrooms, bell peppers and courgettes for some minutes. Stir in the tomato, the juice and the olives. Season with rosemary and thyme. Cook for 5 minutes over low heat. Season to taste with salt and pepper.Serve with baguette.
