Quick lemon lime butter curd recipe details
Ingredients
1 kg | white sugar |
14 large | eggs, chook chicken |
1 ½ l | lemon juice |
1 kg | butter, salted |
Instructions
Place butter and selected juice in large pan and slowly melt, add sugar and stir constantly to dissolve. Bring to boil and simmer for up to 5 minutes. Take off heat and cool slightly.Crack eggs and place both yolks and whites in blender(whisking is NOT enough) and blitz until some bubbles form on top as his breaks up the whites and stops any white lumps forming in the curd.
Add blended eggs to slightly cooled but still hot juice mixture and whisk thoroughly.
Return mixture to heat and without boiling cook until thick, which can be a bit tricky.
Bottle the hot thick curd into hot steralized jars and put clean lids on while very hot.
Allow to cool totally before labelling, then placing in refrigerator. Keep Refrigerated.
I find that this mixture keeps in the fridge for up to 3 months unopened, but I would be really surprised if you can make it last that long, especially Passionfruit!
Variations:
Instead of the lemon juice use 1 litre of Tahitian Lime, orange juice or 75% Passionfruit/25%Lemon juice.
This recipe is easy to adapt, so try any variety of you favourite fruit juice or pulp. I have made strawberry, peach, apricot, apple and even mango butter.
