Ingredients
Serves: 4- 2 tablespoons vegetable oil
- 3/4 pound lamb sausage, casing discarded
- 1 onion, chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1 (14 1/2 ounce) can diced tomatoes
- 1 (14 1/2 ounce) can garbanzo beans, rinsed
Preparation method
Prep: 10 mins | Cook: 30 mins1. Pour 1 tablespoon oil into a large saucepan and set over medium-high heat. Crumble sausage into the saucepan and cook for about 8 minutes to brown thoroughly, then drain and set sausage on a plate.
2. Pour another tablespoon oil into the saucepan and add onion. Cook for about 5 minutes to soften, then add cumin and cinnamon and cook for 1 more minute.
3. Stir tomatoes, garbanzo beans, and 2/3 cup water into the saucepan. When mixture comes to a boil, let simmer for 5 minutes, then add sausage and cook for 10 more minutes. When stew is thickened and very hot, serve.
