Ingredients

1 kg pumpkin, seeded and diced
20 g ginger, diced
1  onion, diced
3 tbsp oil
salt and pepper
1 l vegetable stock
150 g smoked pork loin, sliced
½ bunch(es) chives, chopped
1 tbsp lemon juice
4 slice(s) wholemeal bread, toasted and diced

Instructions

In a saucepan, heat the oil. Add the onion and ginger and sauté over low heat for 3-5 minutes. Add the pumpkin and fry for 5 more minutes. Pour in the vegetable stock and bring to a boil. Reduce the heat and simmer for 20 minutes.

Purée the soup. Season to taste with salt, pepper and lemon juice.

Stir in the smoked pork loin, chives and the croûtons and serve hot.
