Pumpkin soup with curry recipe details
Ingredients
500 g | pumpkin flesh, diced |
½ l | vegetable stock |
¼ l | single cream |
2 tbsp | pumpkin seeds |
salt and pepper | |
curry powder | |
butter |
Instructions
Heat the butter and roast the pumpkin seeds over low heat until slightly browned.Bring the stock with the pumpkin to a boil and cook over medium heat until the pumpkin is soft. Add the cream and cook for some more minutes. With a hand blender, purée the soup. Season to taste with salt, pepper and curry powder.
Serve sprinkled with the pumpkin seeds.
