Pumpkin Pat recipe

|1 medium||onion, finely chopped|
|2 clove(s)||garlic, minced|
|2 tbsp||olive oil|
|1 small||chili pepper, chopped|
|2 tbsp||tomato puree|
|500 g||tomatoes, chopped|
|750 g||pumpkin flesh, deseeded|
|115 g||peanut butter|
|2 tbsp||lime jucie|
|salt and pepper, to taste|
Heat oil in a large saucepan and sauté onion, chili and garlic until soft. Add the tomato puree and tomatoes to the pan. Season with the salt, pepper and sugar. Cook over low heat for 10 minutes.
Add the pumpkin flesh to the sauce. Cover with a lid and leave to cook until tender, about 30-45 minutes.
Add the peanut butter and lime juice and cook for a further 5 minutes.
Serve with hot pitta bread.
