Pumpkin lasagna with mozzarella recipe details
Ingredients
1 ½ kg | pumpkin, diced |
2 | onions, chopped |
5 | tomatoes, diced |
some | single cream |
some | white wine |
½ bunch(es) | basil, chopped |
salt and pepper | |
250 g | cheese, grated |
2 tbsp | butter |
For the sauce: | |
50 g | butter |
50 g | flour |
500 g | milk |
200 g | single cream |
3 tbsp | crème fraîche |
½ bunch(es) | parsley, chopped |
500 g | lasagna sheets |
2 pack(s) | mozzarella, sliced |
Instructions
In a saucepan, melt the butter and fry the pumpkin, onions and tomatoes over medium heat for 5 minutes. Pour in some single cream and a dash of white wine. Season with salt and pepper. Stir in the basil. Set aside.For the sauce, melt the butter. Add the flour and cook stirring until pale yellow. Pour in the milk, single cream and the crème fraîche and bring to the boil, stirring constantly with a wire whisk. Simmer for 5-6 minutes. Stir in the parsley and season with salt and pepper.
Preheat the oven to 200°C.
In a buttered casserole dish, cover the bottom with some of the sauce, Layer in turn sheets of lasagna, pumpkin mixture and grated cheese, sheets of lasagna, sauce and so on, the last layer should be sauce. Divide the mozzarella slices on top.
Bake for 35-45 minutes.
