Pumpkin cranberry bars recipe details
Ingredients
270 g | flour |
1 tsp | baking powder |
½ tsp | baking soda |
1 tsp | cinnamon |
¼ tsp | ginger, ground |
¼ tsp | salt |
230 g | butter, softened |
200 g | white sugar |
1 large | egg |
1 tsp | vanilla extract |
250 g | pumpkin purée |
100 g | pecans |
Instructions
Preheat oven to 180°C.Place the pecans on a baking sheet and bake for about 8-10 minutes. Cool completely and then coarsely chop. Set aside.
Increase the oven temperature to 190°C and grease a 23 x 23 cm pan.
Whisk together the flour, baking powder, baking soda, cinnamon, ginger, and salt. Set aside.
Cream the butter and sugar until light and fluffy, 3 minutes. Add the egg and vanilla extract and beat until incorporated. Beat in the pumpkin puree until incorporated.
Gradually add the flour mixture, mixing until combined.
Stir in the chopped pecans.
Pour the batter into the prepared pan and bake for about 30-35 minutes. Remove from oven and place on a wire rack to cool. Cut into bars.
