Pumpkin and salmon casserole recipe details
Ingredients
1.2 kg | pumpkin, peeled and seeds removed |
1.2 kg | potatoes |
4 | eggs |
500 ml | single cream |
salt and pepper | |
1 bunch(es) | dill |
750 g | salmon fillet |
6 tsp | mustard, grainy |
250 g | crème fraîche |
Instructions
Preheat the oven to 180°C.Cut the pumpkin in large, thin slices. Peel the potatoes and cut into thin slices.
Whisk the single cream with the eggs and season with salt and pepper. Finely chop the dill and add half of it to the cream and egg mixture.
Slightly grease a casserole dish. Layer the pumpkin and potato slices in turn and cover with the cream and egg mixture. Seal with ovenproof foil and transfer the dish into the oven and bake for 50 minutes.
Meanwhile, rinse the salmon and pat dry. Cut into 16-20 equal stripes. Brush each stripe with mustard and season with salt and pepper.
Remove the casserole dish from the oven, place on a wire rack and remove the foil.
Preheat the oven to 200°C.
Arrange the salmon fillets on the pumpkin and potatoes and spread with the crème fraîche. Transfer the casserole dish back into the oven and bake for further 10 minutes.
Sprinkle with the remaining dill and serve.
