Prune stuffed pork fillet recipe details
Ingredients
1 sprig(s) | rosemary |
700 g | pork fillet |
175 g | prunes |
10 rasher(s) | bacon |
salt and pepper | |
2 tbsp | oil |
150 ml | beef stock |
150 g | crème fraîche |
Instructions
Lengthwise cut a deep pocket into the fillet, but take care not to cut through. Season the inside with salt and pepper and stuff the fillet with prunes. Sprinkle the outside with pepper. Wrap the fillet with the bacon rashers.Heat the oil and fry the fillet over medium-low heat until golden browned all around and cooked through. Take out of the pan, wrap into foil and allow to rest for 10 minutes.
In the meantime chop the remaining plums. Briefly fry the rosemary sprig and the plums in the pan. Deglaze with the stock and boil down to half. Remove the rosemary from the sauce. Stir in the crème fraîche. Season to taste with salt and pepper.
Cut the fillet into slices and serve drizzled with the sauce.
