Prawn salad with avocado recipe details
Ingredients
20 | prawns, frozen |
salt and pepper | |
1 clove(s) | garlic, chopped |
1 | romaine lettuce, leaves separated |
1 | red onion, sliced |
1 | ripe avocado, peeled and diced |
2 tbsp | lemon juice |
½ bunch(es) | chervil, chopped |
6 tbsp | white wine vinegar |
5 tbsp | olive oil |
2 tbsp | oil |
Instructions
Drizzle the avocado with the lemon juice. Mix the vinegar with chervil and olive oil. Season to taste with salt and pepper.In a pan heat the oil. Fry the prawns with the garlic until pink all around and just cooked. Take out of the pan and season with salt and pepper.
In a salad bowl, combine the lettuce, avocado, onion and prawns. Drizzle with the dressing, toss gently and serve.
