Prawn and pineapple curry recipe details
Ingredients
1 tbsp | grapeseed oil |
1 medium | red onion, chopped |
3 clove(s) | garlic, crushed |
4 tbsp | medium curry paste, see database |
400 ml | can of coconut milk |
¼ tsp | salt |
1 tbsp | lime juice |
2 tbsp | ground almonds |
32 large | uncooked peeled prawns, defrosted if using frozen |
1 small | can (230 g) of pineapple chunks |
2 tbsp | fresh coriander, chopped |
Instructions
Heat oil in a heavy based saucepan, add onion and garlic and fry over a low heat, stirring frequently, for 5 minutes until softened.Add curry paste and cook, stirring, for 2 minutes.
Add coconut milk, salt and lime juice, bring to the boil, then simmer for 5 minutes.
Add ground almonds, prawns, coriander, pinapple chunks and a little juice and cook for about 5-8 minutes or until prawns are pink and hot all the way through. taste and adjust seasoning if necessary.
Serve with boiled rice.
Note:What this curry lacks in sofistication it more than makes up for with its versatility. It is quick and easy to make and the prawns can be changed for squid rings or cooked mussels or it can be made with a combination of all three. Just remember to defrost fully if using frozen. The pineapple can also be replaced with mango creating even more combinations.
