Ingredients

1 kg potatoes, waxy variety
100 g sun-dried tomatoes
½ bunch(es) green onions
3 tbsp oil
250 g minced meat
salt and pepper
4  eggs
125 ml milk

Instructions

Wash potatoes and cook in boiling water for about 20 minutes. Cut tomatoes in strips. Cut green onions to thin rings.

Heat 1 tablespoon of oil in a frying pan and sauté the minced meat for about 4 minutes. Season with salt and pepper and remove from the pan.

Drain, peel and slice the potatoes. Fry the potatoes in the pan for some minutes. Add minced meat, tomatoes and scallions and season with salt and pepper. Mix eggs and milk, season well with salt and pepper. Evenly pour the milk and egg mixture over the ingredients in the pan.

Put the pan in the preheated oven at 200°C for 20-25 minutes or until set.
