Potato salad with cottage cheese dressing recipe details
Ingredients
500 g | potatoes, waxy variety |
2 | tomatoes |
1 small can(s) | corn |
250 g | cottage cheese |
150 g | yoghurt |
1 tbsp | olive oil |
¼ tsp | curry powder |
salt and pepper, to taste |
Instructions
Cook the potatoes in salted water until done. Drain, peel and slice the potatoes. Place the tomatoes for 30 seconds into boiling water, then peel and dice the tomatoes. Drain the corn.In a bowl, mix the cottage cheese with yoghurt and olive oil and season to taste with curry powder, salt and pepper. Add potatoes, corn and tomatoes and allow to soak for about an hour.
Before serving, check seasoning and correct if necessary.
