Potato roast with chive dressing recipe details
Ingredients
700 g | potatoes, peeled, grated |
2 | spring onions, trimmed, chopped |
salt and pepper, to taste | |
2 tbsp | olive oil |
For the chive dressing: | |
4 tbsp | mayonnaise |
4 tbsp | Crème fraîche |
2 tbsp | chives, chopped |
Instructions
Grate the potatoes into a bowl and mix in the spring onions. Season with salt and pepper.Heat the oil in a frying pan and add mounds of the grated potato, flattening them with a spatula. Cook over medium heat for 3-4 minutes, then turn over and cook the other side.
Combine the mayonnaise, crème fraîche and chives.
Remove the rösti from the pan and transfer to serving plates. Serve with dollops of chive dressing.
