Potato quiche recipe details
- Ingredients:
- 6 ounces hash brown potatoes
- 1 quart hot water
- 5 eggs
- 1/2 cup cottage cheese
- 1 cup Swiss cheese, grated
- 1 green onion, chopped
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 4 drops hot sauce
- 4 ounces sliced and sauteed mushrooms
- Paprika to taste
- 1 slice bacon, cooked and crumbled (optional)
Preheat oven for 350 degrees. Cover hash browns with hot water and let stand 10 minutes. Drain well and pat with paper towel. In blender combine eggs, salt, pepper, and hot sauce. Pour into mixing bowl. Add potatoes, mushrooms, onions, cottage cheese, and Swiss cheese. Pour into greased 9-inch pie pan. Sprinkle with paprika and bacon if desired. Bake for 35 minutes at 350 degrees or until potatoes are tender and eggs are done.
