Potato Pancake recipe

|1 ½ kg||potatoes, washed, peeled, grated|
|½ tsp||baking powder|
|1 medium||onion, chopped|
|salt and pepper, to taste|
|vegetable oil, for frying|
Beat the eggs and mix with the grated potatoes and other ingredients, except the oil.
Heat oil in a skillet over medium high heat and drop potato mixture by heaping tablespoons into oil. Use a spoon or a ladle flatten them out.
Fry to golden brown on both sides, about 3 minutes per side.
Drain on paper towels and serve topped with applesauce.
