Ingredients
300 g | carrots, peeled and sliced |
1 bunch(es) | spring onions, sliced |
20 g | ginger, grated |
800 g | potatoes, peeled and quartered |
2 tbsp | yellow curry paste |
1 large can(s) | coconut milk |
250 g | mangetout, halved |
5 sprig(s) | mint, chopped |
300 g | full fat yoghurt |
2 clove(s) | garlic, minced |
3 tbsp | oil |
salt and pepper | |
250 ml | vegetable stock |

Instructions
In a pan heat the oil and sauté the potatoes, carrots, ginger, garlic and the onions. Stir in the curry paste and cook stirring for 3-4 minutes. Season with salt and pepper. Pour in the coconut milk and the stock and bring to a boil. Cover, reduce the heat and stew for 20 minutes or until the potatoes are done. Add the mangetout and cook for 2 more minutes. Season to taste with salt, pepper, sugar and curry.Mix the yoghurt with the mint. Season to taste with salt and pepper.
Serve the curry with the yoghurt and mint dip.
