Potato Bread Sandwich Rolls recipe

- Ingredients
- 1 package yeast
- 1/4 cup warm water
- 1/2 cup hot plain mashed potatoes
- 1 egg
- 1/4 cup Criscoshortening
- 1-1/2 teaspoons salt
- 1 cup milk, scalded
- 1/4 cup sugar
- 4 to 4-1/2 cups sifted flour
Soften yeast in water. In a large bowl, combine potatoes, shortening, sugar, salt, and hot milk. Cool to warm. Add yeast and egg. Stir in 2 cups of the flour; beat well. Stir in enough of the remaining flour to make a soft dough. Knead 6 to 9 minutes, then form into a ball and lightly grease with vegetable oil. Cover and let rise in a warm place until double (about 1 hour).
Punch down and shape into ball. Let rest 10 minutes. Cut ball in fourths, then cut each piece into fourths. Form each into a smooth ball. Place the 16 balls on a greased baking sheet about 2 inches apart. Snip balls almost to center in 3 places with scissors. Lightly spray the tops with a little water. Let rise again in a warm place until double (about 1 hour).
Preheat oven to 400 degrees. Bake for 10 to 15 minutes just until golden. Brush them with melted butter when still hot. Yum!
