Potato apple prune stuffing recipe details
Ingredients
250 g | prunes, pitted, chopped |
3 large | potatoes, peeled, cubed |
2 tbsp | olive oil |
8 slice(s) | white bread, toasted, cut into cubes |
60 g | butter |
2 | Granny Smith apples, peeled, cored, cut into chunks |
2 small | onions, chopped |
3 tbsp | fresh tyhme leaves, chopped |
3 tbsp | fresh parsley leaves, chopped |
salt and pepper, to taste |
Instructions
Preheat oven to 200°C. Line a roasting pan with nonstick foil.Place prunes in a bowl with boiling water and let sit for 15 minutes. Drain and press through a fine strainer. Set aside.
Toast white bread cubes and place in a bowl.
Toss potatoes with olive oil and place in roasting pan. Roast for 20 minutes and turn occasionally, until browned. Remove from oven and let cool.
Add potatoes to the bowl with the toasted bread cubes.
Melt butter in a skillet over medium heat and place apples inside. Sauté apples, onions, and thyme until softened, stirring often, about 15 minutes.
Add sauteed mixture to the potatoes and bread, along with the prunes and parsley. Season with salt and pepper and toss thoroughly.
Serve as a side dish, use as stuffing immediately or store covered and refrigerated for up to 1 day.
