Potato and asparagus soup recipe details
Ingredients
600 g | asparagus, woody ends removed, sliced |
500 g | potatoes, peeled and diced |
1 tbsp | butter |
350 ml | milk |
350 ml | single cream |
250 g | crème fraîche |
salt and pepper | |
4 tbsp | parsley, chopped |
200 g | goat cheese, crumbled |
Instructions
Preheat the oven to 230°C.In a pan, melt the butter and sauté the asparagus for 3 minutes. Add the potatoes and sauté for 3 more minutes. Stir in the milk, cream and the crème fraîche. Cook over medium heat for 10 minutes or until the potatoes are done. Season to taste with salt and pepper. Stir in the parsley.
Pour the soup into a buttered casserole dish. Sprinkle with the cheese and bake for 15 minutes.
