Ingredients
Serves: 4- 1 (1 pound) pork tenderloin
- Olive oil
- Salt and pepper
- 4 cups chicken broth
- 1 small orange, zested, then sliced
- 1 carrot, shredded
- 2 large shallots, chopped
- 2 cloves garlic, crushed
- 2 bay leaves
- 1 teaspoon honey
- 1 teaspoon whole black peppercorns
- 2 sprigs thyme, chopped
- 2 sprigs rosemary, chopped
- 1/4 cup chopped fresh parsley
- 4 kaiser rolls
Preparation method
Prep: 10 mins | Cook: 25 mins1. Preheat oven to 425 degrees F.
2. Rub pork with olive oil and sprinkle with salt and pepper. Place in a 13×9-inch baking dish. Bake for 25 minutes, until pork reaches an internal temperature of 145 degrees F. Remove from oven and let stand for 3 minutes, then slice thinly.
3. While pork roast is baking, combine stock, orange slices, carrot, shallots, garlic, bay leaves, honey, and peppercorns in a saucepan and set over high heat. When mixture comes to a boil, turn heat down to low and cook for 20 minutes.
4. Pour jus through a wire mesh colander into shallow pie pan. Discard solids. In a separate small bowl, stir orange zest, thyme, rosemary, and parsley together.
5. Coat pork slices in jus in the shallow pie pan, then place in kaiser rolls. Top meat with orange zest and herb mixture.
6. Serve sandwiches with any extra jus for dipping.
