Ingredients
8 sprig(s) | oregano, chopped |
6 sprig(s) | thyme, chopped |
4 clove(s) | garlic, chopped |
1 ½ kg | pork roast |
salt | |
2 tbsp | oil |
250 ml | white wine |
1 kg | spring onions, sliced lengthswise |
4 clove(s) | garlic, halved |
some | salt and pepper |
some | butter |
Instructions
In a small bowl, mix together 1 teaspoon of salt, some pepper, the oregano, thyme, chopped garlic and the oil. Rub the pork roast with the mixture.
Preheat the oven to 175°C.
Place the roast into a buttered casserole dish and add the halved garlic cloves. Bake for 45 minutes. Pour over the white wine and bake for 15 minutes. Remove the roast from the casserole. Divide the spring onions in the casserole dish and place the roast on top. Bake for 40-50 more minutes.
Serve with mashed potatoes.
