Ingredients

50 g sugar
25 g butter
3 tbsp cider vinegar
10  green peppercorns
250 g rhubarb
2 tbsp oil
6  pork medallions

Instructions

In a saucepan, heat sugar, butter, cider vinegar and green peppercorns and cook for a few minutes. Clean rhubarb and cut into cubes. Add to the pan and cook gently for 5-6 minutes. Season with salt and pepper and keep warm.

Heat the oil in another pan. Fry the pork medallions until golden on both sides and just cooked through. Season with salt and pepper and serve with the rhubarb.
