Ingredients
1 ½ kg | pork loin, trimmed, bones removed |
1 tsp | fennel seeds |
1 tsp | grated lemon peel |
1 tbsp | pepper, coarsley ground |
3 | onions, chopped |
200 ml | dry white wine |
200 ml | milk |
200 ml | single cream |
1 sprig(s) | sage |
salt | |
sunflower oil |
Instructions
From the loin we get the leanest and most tender pork cuts. Since they’re lean, these cuts tend to dry out if overcooked. Gently braised in milk and cream the meat gets soft and delicious.In a mortar, pestle the pepper together with the fennel seeds, add lemon peel and 1 tablespoon of oil, mix well and rub the pork thoroughly with the mixture. Allow to marinate for 2-3 hours.
Preheat the oven to 120°C.
Heat 2 tablespoons of oil in a roasting pan and fry the pork over medium heat until golden all around. Take out of the pan and season with salt.
Place the onions into the roasting pan and fry over medium heat until golden. Deglaze with the white wine and cook until the wine has evaporated. Add milk and cream into the pan, season with salt and bring to a soft boil. Return the meat into the pan and add the sage. Cover the roasting pan and place into the oven. After 1,5 hours turn the meat once. Braise for another 1,5 hours.
The meat should be tender by now. Take out of the pan and allow to stand for some minutes. Discard the sage. Mix the sauce with a hand blender until smooth and well combined. Season to taste with salt and pepper. Reheat the sauce. Carve the meat and place the slices into the sauce to heat up.
Serve with ribbon noodles, gnocchi or polenta.
