Pork fillet hokkien noodles stir fry recipe details
Ingredients
400 g | pork fillet, cut into 5 mm slices |
60 ml | vegetable oil |
1 | red capsicum, trimmed and cut into fine slices |
1 | white onion, cut in half and then into wedges |
5 | spring onions, trimmed and cut into 5 cm lengths |
8 slice(s) | ginger |
3 clove(s) | garlic, finely sliced |
1 packet(s) | 220 g fresh Hokkien noodles |
2 tbsp | shao hsing wine |
1 tbsp | light soy sauce |
1 tbsp | oyster sauce |
½ tsp | sesame oil |
1 pinch(es) | sea salt |
1 pinch(es) | Szechuan pepper, dry roasted and freshly grounded |
For the marinade: | |
1 tbsp | shao hsing wine |
1 tbsp | hoisin sauce |
1 tbsp | malt vinegar |
1 tbsp | sugar |
1 ½ tbsp | light soy sauce |
½ tsp | sesame oil |
Instructions
Combine pork and marinade ingredients, cover and leave in the fridge for about 30 minutes.Heat 2 tablespoons of the oil in a hot wok or heavy based pan and stir-fry the pork for 1 minute.
Remove from wok and set aside.
Add remaining oil to hot wok with capsicum, onion, spring onion, ginger and garlic and stir-fry for about 1 minute.
Toss in noodles and reserved pork and stir-fry for about 40 seconds. Finally add wine, soy sauce, oyster sauce and sesame oil and stir-fry for about 90 seconds until pork is cooked through and noodles are hot.
Sprinkle with salt and pepper and serve.
