Ingredients

600 ml beef stock
2 kg pork belly, skin on
2  carrots, sliced
1 stalk(s) leek, sliced
½ bulb(s) celeriac, diced
1  onion, quartered
500 ml dark beer or stout
salt and freshly ground black pepper

Instructions

Preheat the oven to 130°C. Heat the stock and pour into a casserole dish. Place the pork belly with the skin side down into the stock. Cover and cook in the oven for an hour.

Switch the heat to 160°C. Remove the roast from the casserole dish. Place on the working place, skin side up and score the skin with a sharp knife, the cuts a finger width apart. Season generously with salt and pepper. Transfer the pork belly with the skin side up back into the casserole dish. Surround with the vegetables. Add some of the stout and roast in the oven for 1- 1½ hours, basting every now and then with the stock or with stout.

When the meat is tender, switch on the oven grill and cook until the skin has turned into crispy crackling. Be careful not to burn the crackling. Remove the roast from the casserole and allow to stand for 5 minutes. Strain the gravy into a saucepan and bring to a boil and boil down a bit, if necessary. Carve the roast.

Serve the pork roast with the sauce, small potatoes and cabbage of your choice.
