Popover pancake with sauteed plums recipe details
- Ingredients:
- 1 Tablespoon vegetable oil
- 4 large eggs
- 2/3 cup all-purpose flour
- 2/3 cup milk
- 1-1/2 Tablespoons cold butter or margarine, cut in small pieces
- Sauteed Plums:
- 1 Tablespoon butter or margarine
- 1-1/2 pounds round black plums, cut in wedges
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- Confectioners’ sugar (optional)
Heat oven to 450 degrees. Pour oil in a 9-inch metal pan. Heat in oven 5 minutes. Meanwhile put eggs, flour and butter in blender or food processor and process until well-blended. Scrape down sides and process 10 seconds longer. Pour batter into hot pan. (Bake 10 minutes without opening oven door until pancake has puffed up high around edges.) Reduce temperature to 350 degrees and bake 10 minutes longer until sides are firm.
While pancake bakes, prepare sauteed plums; melt butter in a large skillet. Add plums, sugar and cinnamon. Stir over medium heat 4 minutes or until plums are translucent. Dust pancakes with confectioners’ sugar, then spoon in the plum pancake in wedges and straight from the pan.
