Want to really show off at holiday dinner? This cut of pork–ribs tied in a circle with the bones pointed up to form a “crown”–will wow ’em. You’ll have to order a crown roast ahead of time from the butcher. This recipe incorporates a sweet pomegranate glaze for a subtle flavor.

Ingredients
Serves: 14- 4 cloves garlic, minced
- 3 tablespoons chopped fresh rosemary
- 1 tablespoon olive oil
- 1 tablespoon salt
- 1 1/2 teaspoons black pepper
- 1 (12 to 13 pound) pork crown roast with 16 ribs, chine bone removed, rib bones frenched
- 4 cups pomegranate juice
Preparation method
Prep: 20 mins | Cook: 2 hours | Extra time: 30 mins, resting1. Preheat oven to 375 degrees F.
2. Stir garlic, rosemary, olive oil, salt, and pepper together in a bowl. Rub onto the roast, then set in a roasting pan. Stick a meat thermometer into the deepest part of the roast.
3. Bake for 1 hour and 15 minutes, until roast reaches an internal temperature of 100 degrees F.
4. While roast bakes: pour pomegranate juice into a saucepan and set over medium-high heat. Cook until juice reduces down to a thick syrup, stirring frequently; this will take about 30 minutes.
5. Brush pork with pomegranate mixture, then return to oven and bake for another 45 minutes, until pork reaches an internal temperature of 135 degrees F. Coat with pomegranate mixture every 15 minutes or so.
6. Remove from oven and let stand for 30 minutes. Slice and serve.
