Polenta crusted chicken recipe details
Ingredients
600 g | chicken breasts |
some | salt |
some | black pepper, freshly grounded |
2 tbsp | olive oil, extra virgin |
150 g | polenta |
1 tsp | cumin, ground |
2 tsp | paprika |
2 tsp | oregano, dried |
1 tsp | chili powder |
some | olive oil, for frying |
Instructions
Slice the chicken breasts lengthwise into 1 cm thick slices, season with salt and pepper and put in a bowl with 2 tbsp extra virgin olive oil. Toss to ensure that all the slices are coated in the oil.Heat some olive oil in a non-stick frying pan over medium heat to high heat. Fry the chicken pieces until golden brown on all sides and cooked through. Add extra oil when necessary. Drain on paper towels.
