Plum tart recipe details
- Ingredients:
- 1 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking powder
- Salt to taste
- 12 plums, halved and pitted
- 1 Tablespoon sugar more or less
- 1 Tablespoon cinnamon
My sister Mary has been the keeper of several family recipes. This is one of her best and when Mary shared this with Carol forty years ago, Carol knew she was now an O’Connor.
Grease and flour a 9-inch springform pan; preheat oven to 350 degrees. Cream sugar and butter until light in color. Beat in eggs and vanilla. Sift dry ingredients and stir into batter. Spoon into pan. Cover with plum halves, skin side up. Sprinkle with sugar and lemon juice; adjusting to tartness of fruit, sprinkle with cinnamon. Bake for one hour at 350 degrees. Best served warm. It can be frozen and reheated.
