Ingredients
100 g | brown sugar |
2 tbsp | cornstarch |
½ tsp | cinnamon |
1 kg | plums, pitted, quartered |
2 tbsp | lemon juice |
2 tbsp | butter, unsalted |
190 g | granulated sugar |
80 g | flour |
1 tsp | baking powder |
½ tsp | salt |
70 g | almonds, sliced |
1 large | egg, well beaten |
Instructions
Preheat oven to 190°C.Whisk together the brown sugar, cornstarch and cinnamon. Add the plums, lemon juice and butter. Toss the mixture thoroughly and spoon into a shallow 3-quart baking dish.
In a blender process the granulated sugar, beaten egg, flour, baking powder, salt, and half of the the sliced almonds.
Spoon the flour mixture over the plum mixture and sprinkle the remaining almonds over the cobbler.
Bake until golden and bubbling, about 40 minutes.
Serve warm.
