Ingredients

450 g self-raising flour
225 g sugar
75 g butter, or use 150g butter if preferred and no lard
75 g lard or hard white vegetable fat
225 g currants
125 g sultanas
30 g candied peel
2 medium eggs, beaten
1 tbsp golden syrup
150 ml milk

Instructions

Preheat the oven to Gas Mark 2, 150°C, 300°F.

Grease 2, 1lb loaf tins.

Place the flour into a bowl and rub in the fats. Mix in the remaining dry ingredients.

Warm the syrup and mix with the eggs and pour over the dry ingredients and mix to a dough with the milk. Add a little more if necessary.

Divide the mixture between the loaf tins and brush with a little milk. Bake for 45 minutes or up to an hour, if required, until browned and well risen.

Allow to cool in tins for 10-15 minutes and then turn out onto a wire rack to cool completely.
