Plum bread recipe details
Ingredients
450 g | self-raising flour |
225 g | sugar |
75 g | butter, or use 150g butter if preferred and no lard |
75 g | lard or hard white vegetable fat |
225 g | currants |
125 g | sultanas |
30 g | candied peel |
2 medium | eggs, beaten |
1 tbsp | golden syrup |
150 ml | milk |
Instructions
Preheat the oven to Gas Mark 2, 150°C, 300°F.Grease 2, 1lb loaf tins.
Place the flour into a bowl and rub in the fats. Mix in the remaining dry ingredients.
Warm the syrup and mix with the eggs and pour over the dry ingredients and mix to a dough with the milk. Add a little more if necessary.
Divide the mixture between the loaf tins and brush with a little milk. Bake for 45 minutes or up to an hour, if required, until browned and well risen.
Allow to cool in tins for 10-15 minutes and then turn out onto a wire rack to cool completely.
