Plantation cakes with sauteed apples and maple sugar recipe details
- Ingredients for each serving:
- 1 egg
- 1/4 cup milk
- 1/4 cup flour
- 1/8 teaspoon salt
Turn oven on to 450 degrees. Prepare individual oven-proof 1-cup quiche dishes by placing two teaspoons of margarine in each dish and pre-warming them in the oven for five minutes before adding the mixture.
Whisk egg(s) in milk. Sift in flour and salt. Blend with whisk. Remove hot dishes from oven and swirl them to spread the margarine over the bottom surface of the dish. Pour in mixture and quickly return to oven. Turn down heat to 400 degrees. Bake for 20 minutes.
While Pancakes bake:Peel, core, and quickly slice, one large apple for each two pancakes. Saute slices in margarine just until transparent and still holding shape. Three minutes before pancakes come out, sprinkle with 2 tablespoons of crushed maple sugar for each apple. Toss gently to coat slices. Serve on top of pancakes.
Plantation cakes are four-inch high puffs baked in the oven, similar to popovers. The maple sugar is available in 1-pound bags from the Heritage Mountain Craft Festival held near the Inn in June and September.
