Pistachio ginger marzipan pralines recipe details
Ingredients
150 g | shelled pistachios, unsalted |
100 g | whole almonds, skinned |
50 g | candied ginger |
1 tbsp | rum |
2 tbsp | syrup |
50 g | icing sugar |
50 g | dark chocolate |
Instructions
Set aside 20 pistachios. In batches, chop the remaining pistachios, almonds and ginger finely. If you use a food processor, be careful not to process for too long as the mixture will become oily and separate.Turn into a bowl and add rum, syrup and icing sugar. Knead into a smooth dough.
Form rolls of approximately 1.5cm in diameter. Every 1.5cm cut pieces and shape into cubes with your hands.
Chop the chocolate and melt in a bowl over a saucepan of simmering water.
Dip marzipan cubes a quarter of the way into the chocolate and leave to set on a tray lined with baking paper.
Use a small icing bag to pipe designs onto the pralines with the remaining chocolate. Set halved pistachios into a little blob of chocolate as decoration.
Additional Note:These make a lovely present packaged in a pretty glas jar with a red organza ribbon.
