- Ingredients
- In a large bowl combine:
- 2 Tablespoons canola oil
- 2 cups sugar
- 3 eggs
- 2 teaspoons vanilla
- One 20-ounce can crushed pineapple
- 1 cup unsweetened applesauce
- Then add:
- 2-1/2 cups unbleached flour
- 3 teaspoons baking soda
- 2 teaspoons baking powder
- Mix until smooth and add:
- 1 cup low fat buttermilk
- 1 Tablespoon ground cinnamon
- 2 cups unbleached flour, (additional)
Spray bundt pans with non-stick cooking spray. Fill each 2/3 full of batter and bake in a 325-degree F oven for 45 minutes. Makes 3 small bundt pans; or 1 large and 1 small; or 3 loaf pans.
