Ingredients

600 g	Flank steak, cut into cubes
50 g	shredded coconut
300 ml	water
2 tbsp	canola oil
30 g	flour
1 tbsp	curry powder
250 g	pineapple chunks
1 small	green pepper, seeded, chopped
3 tbsp	mango chutney
1 tbsp	red currant jelly
1	beef stock cube
	salt, to taste

Instructions

Soak coconut in water for one hour. Strain and reserve liquid.

Brown meat in oil and stir in flour and curry. Cook for 6 minutes. Add coconut water and pineapple. Stir in remaining ingredients, bring to a boil, and keep stirring until thickened.

Turn into slow cooker and cook over medium heat for 40 minutes. Reduce heat to low and cook for a further 5 hours.

Serving suggestion:Servie over rice.
