Pineapple beef curry recipe details
Ingredients
600 g | Flank steak, cut into cubes |
50 g | shredded coconut |
300 ml | water |
2 tbsp | canola oil |
30 g | flour |
1 tbsp | curry powder |
250 g | pineapple chunks |
1 small | green pepper, seeded, chopped |
3 tbsp | mango chutney |
1 tbsp | red currant jelly |
1 | beef stock cube |
salt, to taste |
Instructions
Soak coconut in water for one hour. Strain and reserve liquid.Brown meat in oil and stir in flour and curry. Cook for 6 minutes. Add coconut water and pineapple. Stir in remaining ingredients, bring to a boil, and keep stirring until thickened.
Turn into slow cooker and cook over medium heat for 40 minutes. Reduce heat to low and cook for a further 5 hours.
Serving suggestion:Servie over rice.
