Ingredients
2 | good size fishes, filleted |
oil for deep-frying | |
For the sauce: | |
1 ½ cup(s) | white wine vinegar |
1 cup(s) | water |
3 | onions, cut into small chunks |
1 tbsp | curry powder |
salt, to taste | |
2 tbsp | sugar |
3 | bay leaves |
1 tbsp | sweet chutney |
½ tbsp | cilantro, chopped |
1 tsp | cornflour |
For the batter: | |
1 cup(s) | flour |
2 tsp | baking powder |
1 ¼ tsp | salt |
2 tsp | sugar |
1 tbsp | vegetable oil |
1 cup(s) | water, preferably soda water or sparkling mineral water |
Instructions
Whisk together the ingredients for the batter until smooth and well combined. Cut the fish into small pieces, dip in batter and fry in batches in hot oil. Keep warm
Combine the vinegar and water in a pan and bring to the boil. Add the onions, the chutney and all the other spices and herbs. Season with salt. Simmer on a medium heat for 30 minutes and thicken the sauce with cornflour.
Place the fried fish in a dish and pour over the sauce.
