Ingredients

2  good size fishes, filleted
oil for deep-frying
For the sauce:
1 ½ cup(s) white wine vinegar
1 cup(s) water
3  onions, cut into small chunks
1 tbsp curry powder
salt, to taste
2 tbsp sugar
3  bay leaves
1 tbsp sweet chutney
½ tbsp cilantro, chopped
1 tsp cornflour
For the batter:
1 cup(s) flour
2 tsp baking powder
1 ¼ tsp salt
2 tsp sugar
1 tbsp vegetable oil
1 cup(s) water, preferably soda water or sparkling mineral water

Instructions

Whisk together the ingredients for the batter until smooth and well combined. Cut the fish into small pieces, dip in batter and fry in batches in hot oil. Keep warm

Combine the vinegar and water in a pan and bring to the boil. Add the onions, the chutney and all the other spices and herbs. Season with salt. Simmer on a medium heat for 30 minutes and thicken the sauce with cornflour.

Place the fried fish in a dish and pour over the sauce.
