Pickled eggs recipe details
Ingredients
20 | free range eggs, hard boiled |
2 handful | onion skin (appr. 7 onions) |
2 l | water |
50 g | salt |
1 tbsp | sugar |
3 | bay leaves |
1 tbsp | caraway or 2 |
3 tbsp | mustard seeds |
1 tbsp | peppercorns or 2 |
1 dash(es) | vinegar |
Instructions
Bring the water with the onion skin to a boil. Allow to infuse for 10 minutes, better 30 minutes. Strain into a saucepan and add salt, sugar, vinegar, bay leaves, cloves, mustard seeds, caraway and peppercorns. Bring to a boil and stir until salt and sugar are dissolved and allow to cool completely.Crack the shell of the boiled eggs all over, but donít peel. Place the eggs in a large preserving jar and fill with the brew up to the rim. Seal and store for 1-2 weeks before serving. In a cool and dark place they will store for 1-2 months.

Variation:
You may also add herbs like thyme or rosemary for a Mediterranean flavour. Fennel or dill can give a special flavour. If you like them more spicy, add more vinegar and some dried chili peppers.
