Ingredients
4 medium | eggs, 2 yolks and 2 whole |
130 g | sugar |
200 g | flour |
2 tsp | baking powder |
120 ml | milk |
5 tbsp | butter, melted |
500 ml | For the petits fours frosting: |
260 ml | sugar |
⅛ tsp | cream of tartar |
240 ml | water |
130 g | confectioners’ sugar |
Instructions
Preheat the oven to 180°C. Grease and flour a baking pan.Combine the 2 eggs and egg yolks in a bowl and beat using an electric mixer. Add sugar, and beat for about 10 minutes. Sift the flour and baking powder into the egg mixture, and fold in by hand along with the milk. Stir just until the batter is mixed. Add the melted butter and stir until smooth. Spread the batter evenly in the prepared pan.
Bake for 12-15 minutes. Invert the cake pan onto a sheet of waxed paper, and cool completely.
Cut the cooled cake into small squares, rectangles or triangles, and arrange the pieces in rows on a wire rack. Set the rack over waxed paper to catch the drips.
Frosting:>/b>
Stir together the white sugar, cream of tartar and water in a saucepan. Bring to a boil over medium heat and stirring occasionally.
When the mixture is very syrupy, remove from heat, and gradually stir in confectioners’ sugar until the icing is thick enough to coat a spoon.
Spoon petit four icing over the small cakes. Allow the petits fours to set until completely dry. Decorate as desired.
