Pepper soup with goat cheese and meatballs recipe details
Ingredients
4 | red pepper, cut into small pieces or cubes |
1 | onion, finely chopped |
100 g | tomato paste |
1 ½ l | vegetable broth |
some | salt and freshly ground pepper, to taste |
2 tsp | olive oil |
500 g | ground meat |
1 tsp | olive oil |
100 g | goat cheese, soft, shredded |
½ bunch(es) | chives, finely chopped |
some | flour, optional |
Instructions
Add peppers and onions together with the vegetable broth in a large pot.Add the tomato paste and stir well. Season with pepper and add 2 tablespoons of olive oil. Bring to a boil on medium heat.
Meanwhile shape the meat small balls with the remaining olive oil and then sauté for 8 minutes
Let the soup simmer on very low heat for approximately 15 – 20 minutes. Season with salt and pepper. Now add the chives to the soup.
After 20 minutes add the meatballs and shredded goat cheese. If desired add a little bit of flour to thicken the soup.
Variation:Substitute the meat with rice or noodles. Replace the goat cheese with a softer cheese of your choice.
