Ingredients
110 g | butter, unsalted |
110 g | golden syrup |
1 tsp | vanilla extract |
225 g | brown sugar |
3 large | eggs, beaten |
250 g | shortcrust pastry case, ready-made |
285 g | pecan nuts, halved |
Instructions
In America, they use ‘light syrup’ for this recipe but it is not generally available outside of USA and Canada. Golden syrup, as used here is a good alternative although it is thicker and probably a little sweeter.Preheat oven to Gas Mark 4, 180°C, 350°F.
Place butter, syrup, vanilla and sugar into a small heavy-based saucepan and warm over a low heat. Once butter has melted, remove pan from heat and allow to cool for at least 10 minutes.
Check that the sides of the pan are comfortably hot (if too hot the eggs will cook) and add the eggs to the mixture and stir thoroughly to mix.
Set aside 6 or 9 of the most complete pecan halves for decoration and spread the remainder evenly over the pastry case. Pour the syrup mixture into the case over the nuts.
Bake for 40-50 minutes until golden brown. The filling should still be slightly soft.
Leave the pie to cool on a wire tray. Once the filling starts to set, arrange the reserved pecans evenly around the pie. Serve in wedges whilst still warm or allow to cool fully, if wished.
