Pecan pie cheesecake recipe details
Ingredients
pastry, , sufficient to line the base and sides of a 8-9 inch/20-22cm shallow springform tin | |
For the Filling: | |
250 g | cream cheese |
1 medium | egg |
75 g | sugar |
1 tsp | vanilla extract |
150 g | pecan halves |
For the topping: | |
2 medium | eggs, beaten |
60 g | sugar |
120 g | golden syrup |
40 ml | water |
1 tsp | vanilla extract |
Instructions
Preheat oven to Gas Mark 5, 190°C, 375°F.Filling:
Combine the filling ingredients in a bowl until light and fluffy. Spread over the pastry base. Arrange pecans over the cheese filling.
Topping:
Mix ingredients together in a blender or by using an electric mixer until well mixed. Carefully pour over pecans.
Bake for 40-45 minutes or until well risen and golden brown on top.
Allow to cool before serving, with cream if desired.
